Kalo

Kalo is either millet or sorghum bread. This is enjoyable in Ankole, Teso or Acholi region. It is rare among the Baganda, but in ceremonies, depending on the guests, it can be prepared. The millet flour and thoroughly boiled water are the key ingredients in preparing Kalo. Others mix millet and cassava and it can be eaten with different sauces including meat, chicken, fish and more.

Luwombo

Luwombo is a common dish served among Baganda. This is prepared in tender banana leaves, wrapped and inside, there can be beef, chicken or groundnuts with smoked fish/meat. The key ingredients for making Luwombo include pounded groundnut, salt, onions, warmed tender banana leaves, tomatoes, carrots and others. Luwombo is prepared in a special way. The warm leaf is carefully picked from specific banana plant and placed in the basket known as Ekibbo ensuring that no holes exist in it. A desired sauce is added and the rest of the ingredients.

Eshabwe

Eshabwe is a common delicacy among the Banyankole in Western Uganda. This is one of the special traditional dishes served during some occasions. This includes ingredients such as water, ghee and rock salt.

Malewa

Malewa is a delicacy in Mbale, Sironko and Bududa districts in Eastern Uganda. This is commonly prepared among the Bagisu. It is served as food or sauce with ground simsim or groundnuts. Malewa is served in most of the Bagisu ceremonies like Imbalu or during traditional weddings. The special ingredients for preparing Malewa include salt, Malewa, peanut paste and water.

The Malewa is boiled in water as one way to clean thoroughly and the joints of the shoot are cut off with the middle parts only left. These will be chopped into smaller pieces and rock salt is added. Peanut paste plus salt can then be added and when served, it is enjoyable with sweet potatoes, cassava, posho, rice or matooke.

Other foods worth trying on culinary tours in Uganda include Katogo -a mixture of beans and matooke; omugoyo, matooke, Lakotokoto and many more.
